Ingredients
- 3 tbsp blanched almond flour
- 1 tbsp coconut flour
- 1/4 tsp baking powder
- 1 tbsp butter room temperature
- 1 tsp oil (avocado or olive)
- 1 egg
- 1 pinch salt

Instructions
- Mix all ingredients together in a large coffee mug (I like to use a ramekin bowl)
- Microwave for 60-90 seconds depending on your microwave. (All liquid should be gone when the muffin is complete)
- Remove from the microwave and slice horizontally into 3 slices
