Mug Muffin
Very similar to a English muffin. Tastes great with peanut butter, sugar free jam or cream cheese. Also a great to use in any eggs benedict recipe. There are so many variations. I like to add blueberries, cinnamon or cocoa.

Instructions
  1. Mix all ingredients together in a large coffee mug (I like to use a ramekin bowl)
  2. Microwave for 60-90 seconds depending on your microwave. (All liquid should be gone when the muffin is complete)
  3. Remove from the microwave and slice horizontally into 3 slices
