Great for any celebration. Everyone loves cheesecake and this is a great low carb version of the New York Style. For variations you could add cocoa or cinnamon. Top with berries and whip cream of your choice! I like to drizzle on some of the Walden Farms Blueberry or Strawberry sugar free syrup!

Crust
- 1 cup blanched almond flour
- 2 tbsp swerve confectioners
- 2 tbsp melted butter
Cheesecake
- 16 oz cream cheese
- 2/3 cup swerve confectioners
- 2 eggs
- 3 tsp lemon juice
- 3 tsp vanilla extract almond extract works as a great substitute
- 1/2 tsp stevia glycerite

Instructions
Crust
- Preheat oven to 350 degrees.
- Combine almond flour, swerve and melted butter to make the crust.
- Press into a 9 inch pie plate and set aside.
Cheesecake
- Blend together cream cheese, swerve, eggs, lemon juice, vanilla and stevia glycerite.
- Pour mixture on top of crust. Spread evenly.
- Bake for 15 minutes until the cheesecake is set. Remove from the oven and let cool. Refrigerate for a couple of hours.
- Serve with sugar free fruit syrup, berries or whipping cream on top.
