Ingredients
- 1 lb chicken thighs I prefer organic air chilled chicken
- 4 tbsp butter
- 1 small diced onion white or red will do
- 1/2 cup chicken bone broth
- 1 cups heavy cream
- 2 tbsp balsamic vinegar
- 4 oz sliced mushrooms
- 1/2 cup shredded parmesan
- 1/2 tsp salt
- 1/2 tsp garlic powder

Instructions
- Over med-high heat add 2 tbsp butter and onions and sauce until onions start to caramelize. Approx 3 minutes.
- Add 2 more tbsp butter and chicken thighs to the pan. Brown the chicken on both sides. Approx 5 minutes per side.
- Remove chicken from pan and set aside.
- Add the chicken bone broth to the pan and simmer for 5 minutes.
- Reduce heat to low and add heavy cream, balsamic vinegar, mushrooms, garlic and salt. Simmer for 5 minutes.
- Return the chicken thighs to the pan and continue to simmer another 20 minutes or until chicken is cooked through.
- Remove chicken from the pan and mix the parmesan cheese into the sauce.
- Return the chicken to the pan and coat with sauce.
- Serve over top of sautéed broccoli and cauliflower.
