Balsamic Chicken with Parmesan Mushroom Sauce
This is seriously my best chicken dinner. The taste is unbelievable. Serve over top of sautéed cauliflower and broccoli.

Ingredients
Instructions
  1. Over med-high heat add 2 tbsp butter and onions and sauce until onions start to caramelize. Approx 3 minutes.
  2. Add 2 more tbsp butter and chicken thighs to the pan. Brown the chicken on both sides. Approx 5 minutes per side.
  3. Remove chicken from pan and set aside.
  4. Add the chicken bone broth to the pan and simmer for 5 minutes.
  5. Reduce heat to low and add heavy cream, balsamic vinegar, mushrooms, garlic and salt. Simmer for 5 minutes.
  6. Return the chicken thighs to the pan and continue to simmer another 20 minutes or until chicken is cooked through.
  7. Remove chicken from the pan and mix the parmesan cheese into the sauce.
  8. Return the chicken to the pan and coat with sauce.
  9. Serve over top of sautéed broccoli and cauliflower.
