Thai Turkey Lettuce Wraps
So delicious and really easy to make. I love the flavor and the heat from the garlic chili paste. If you don't like spicy foods you can either use less or omit this as a topping. This recipe is enough for 4 servings (1 serving is 2 lettuce wraps)

Instructions
Prepare the meat
  1. Cook the ground turkey thoroughly.
  2. Add lemongrass paste, ginger, garlic, turmeric, salt and olive oil. Stir until well blended.
  3. Simmer on low for 5 minutes
Prepare the toppings
  1. Dice the cucumber and green onion
  2. Crush the cashews (I find it easiest to put them in a ziplock bag and crunch them with a rolling pin)
  3. Cut line into wedges
Assemble your lettuce wrap
  1. Take a piece of lettuce, add your meat
  2. Top with desired amount of cucumbers, green onion, garlic chili sauce and crushed cashews
  3. Squeeze a wedge of lime over the wrap and enjoy!
