Ingredients
- 1 lb ground turkey
- 4 tsp lemongrass paste
- 1 tsp ginger paste you can substitute fresh grated ginger or powder
- 2 tsp fresh garlic I like to use the minced garlic in a jar, but fresh or powder works too
- 2 tsp turmeric
- 1/2 tsp salt
- 1/4 cup olive oil
- 1 large cucumber
- 2 green onion
- 4 tbsp chili garlic sauce also known as sambal oelek
- 8 large romaine or butter lettuce leaves
- 1 cup crushed cashews
- 2 limes

Instructions
Prepare the meat
- Cook the ground turkey thoroughly.
- Add lemongrass paste, ginger, garlic, turmeric, salt and olive oil. Stir until well blended.
- Simmer on low for 5 minutes
Prepare the toppings
- Dice the cucumber and green onion
- Crush the cashews (I find it easiest to put them in a ziplock bag and crunch them with a rolling pin)
- Cut line into wedges
Assemble your lettuce wrap
- Take a piece of lettuce, add your meat
- Top with desired amount of cucumbers, green onion, garlic chili sauce and crushed cashews
- Squeeze a wedge of lime over the wrap and enjoy!
