Pumpkin, Coconut, Macadamia, Chocolate Chip Cookies

I should have called this recipe “everything but the kitchen sink” but all the flavors worked so well together.

Instructions
  1. Preheat oven to 350F.
  2. Mix softened butter with swerve, stevia glycerite, egg, pumpkin puree and vanilla extract until smooth.
  3. In a separate bowl whisk together almond flour, coconut, protein powder and baking powder.
  4. Slowly mix the wet ingredients into the dry.
  5. Add the macadamia nuts and chocolate chips.
  6. Place cookies on a greased baking sheet. Each cookie should have about a tbsp of the mixture.
  7. Bake for 10 minutes until slightly brown on the edges. Let cool before serving. Enjoy!
