I should have called this recipe “everything but the kitchen sink” but all the flavors worked so well together.

Ingredients
- 1/2 cup softened butter
- 1/4 cups swerve confectioners
- 1 tsp stevia glycerite
- 1 egg
- 1/2 cup pumpkin puree
- 1 tsp vanilla extract
- 1 cup blanched almond flour
- 1/4 cup unsweetened coconut
- 1/4 cup plain protein powder I like Quest multi-purpose powder
- 1 tsp baking powder
- 1/4 cup crushed macadamia nuts
- 1/2 cup Lily's stevia chocolate chips

Instructions
- Preheat oven to 350F.
- Mix softened butter with swerve, stevia glycerite, egg, pumpkin puree and vanilla extract until smooth.
- In a separate bowl whisk together almond flour, coconut, protein powder and baking powder.
- Slowly mix the wet ingredients into the dry.
- Add the macadamia nuts and chocolate chips.
- Place cookies on a greased baking sheet. Each cookie should have about a tbsp of the mixture.
- Bake for 10 minutes until slightly brown on the edges. Let cool before serving. Enjoy!
