Pecan Shortbread Cookies
These are an amazing low carb substitute for the original. I like to store them in a ziplock bag in the freezer for an occasional treat! Serving size equals 1 cookie.

Instructions
  1. Preheat oven to 325F.
  2. Ground have the pecans and chop the other half.
  3. Using a mixer or hand blender combine butter and swerve until smooth.
  4. Add in vanilla and almond extract.
  5. Mix together almond flour and the ground pecans.
  6. Add this to the butter mixture and combine well.
  7. Slowly stir in chopped pecans.
  8. Drop about a tablespoon of mixture onto a parchment lined baking sheet for each of the cookies.
  9. Take a fork and slightly flatten all of the cookies.
  10. Bake for 15 minutes or until slightly brown around the edges.
