Ingredients
- 1/2 cups melted butter
- 3/4 cup monkfruit granular or powdered sweetener Can substitute another granular sweetener such as swerve or erythritol.
- 1 tsp vanilla extract
- 1 egg
- 1.5 cups blanched almond flour
- 1/2 tsp baking powder
- 1/2 tsp xanthan gum
- 1/4 tsp salt
- 3/4 cup Lily's stevia chocolate chips

Instructions
- Preheat oven to 350F.
- Mix the butter and sweetener together in a bowl.
- Add in vanilla and egg and beat until well combined.
- In a separate bowl combine almond flour, baking powder, xanthan gum and salt.
- Add dry ingredients to wet ingredients and mix until smooth.
- Stir in chocolate chips.
- Line a baking sheet with parchment paper and divide batter into 24 cookies. (Approx 1 tsp batter per cookie)
- Flatten each cookie with your fingers until diameter of a small cookie.
- Bake for 10 minutes.
- When the cookies first come out of the oven they will be soft. Allow them to completely cool and they will crisp up.
