Your house will smell like warm cinnamon and your craving for a bakery style cinnamon bun will be satisfied with this recipe. Only it's better being low carb! Although they appear to have 11g of carbs and 7g sugar per bun, these values come from the erythritol in Swerve which is a non impact carbohydrate. Meaning that it won't affect your blood sugar. So in reality these buns will only have 5g of carbs per serving and 0.3g sugar. Enjoy!

  1. Preheat oven to 350F
  2. Combine the mozzarella cheese and cream cheese in a bowl.
  3. Place the bowl in the microwave for 1 minute and then in 30 second increments until you able to well combine the cheeses into a smooth mixture. Approx 2 minutes should have it well combined depending on your microwave.
  4. Add in the eggs.
  5. Mix together the almond flour and cinnamon and add to the cheese mixture. Mixing the dough with your hands until well combined.
  6. Place dough on parchment paper lined cookie sheet and spread it out to reach the edge of the pan. It is normal for this dough to be very sticky.
  7. Poke holes all over the dough with a fork and then place the pan in the oven for no longer than 6 minutes. You want the dough to be able to be firm enough to hold together but not too firm so that it won't roll.
  8. Once the dough is done take it out of the oven and set aside to slightly cool.
Filling
  1. Melt butter. Add crushed pecans, swerve, cinnamon and vanilla to form a paste.
  2. Spread paste evenly across the dough.
  3. Roll dough like a log.
  4. Slice log into 12 buns. Approx 2 finger widths per bun.
  5. Place 12 buns back onto parchment lined cookie sheet and bake for another 4 minutes.
